🥓🧀 Bacon Cheeseburger Meatloaf
All the flavors of a juicy cheeseburger — beef, bacon, cheese, ketchup — baked into one ultra-comforting meatloaf. Perfect with mashed potatoes or even on a sandwich the next day.
🛒 Ingredients (Serves 6–8)

2 lbs ground beef (80/20 recommended)

1 cup breadcrumbs

2 eggs

½ cup milk

½ cup ketchup

1 tbsp yellow mustard

1 tbsp Worcestershire sauce

1 small onion, finely diced

2 cloves garlic, minced

1½ cups shredded cheddar cheese (or cubed for stuffed center)

8 slices bacon (uncooked)

1 tsp salt

½ tsp black pepper

⅓ cup ketchup

1 tbsp brown sugar

1 tsp mustard
👩🍳 Instructions
1️⃣ Preheat
Heat oven to 350°F (175°C). Line a baking sheet with foil or parchment.
2️⃣ Mix
In a large bowl combine:
Ground beef, breadcrumbs, eggs, milk, ketchup, mustard, Worcestershire, onion, garlic, salt, and pepper.
Mix just until combined (don’t overwork).
3️⃣ Add the cheese

Stuffed version: Press half the meat mixture into a loaf shape, add cheese in the center, then top with remaining meat and seal edges.

Mixed-in version: Stir shredded cheese directly into mixture.
4️⃣ Wrap with bacon
Lay bacon strips across the top of the loaf, tucking ends underneath.
5️⃣ Glaze
Brush with optional glaze for extra “burger” flavor.
6️⃣ Bake
Bake 60–70 minutes, or until internal temp reaches 160°F (71°C).
If bacon isn’t crisp enough, broil 2–3 minutes at the end.
Let rest 10 minutes before slicing.
