Here’s a cozy, slightly fancy dish that’s still easy to pull off—great as a side or even a light main.
🍯 Honey-Glazed Acorn Squash with Creamy Goat Cheese & Cranberry Drizzle
Ingredients:
- 2 acorn squash (halved, seeds removed)
- 2–3 tablespoons honey
- 1 tablespoon oil
- Salt & black pepper
- 100g goat cheese (soft)
- ½ cup cranberry sauce (store-bought or homemade)
Optional extras:
- Chopped nuts (walnuts or almonds)
- Fresh herbs (like parsley or thyme)
- A pinch of cinnamon or chili flakes
🔥 Instructions:
- Prep the squash
Preheat oven to 200°C (400°F). Place squash halves cut-side up on a baking tray. - Season & glaze
Drizzle with oil and honey, then sprinkle with salt and pepper. - Roast
Bake for 35–45 minutes until the squash is tender and caramelized around the edges. - Add goat cheese
Remove from oven and crumble goat cheese into the center of each half while still warm (it’ll soften nicely). - Cranberry drizzle
Spoon cranberry sauce over the top. - Finish & serve
Add nuts or herbs if using, and serve warm.
💡 Tips:
- If your cranberry sauce is thick, warm it slightly for easier drizzling.
- Want it more savory? Reduce honey and add a pinch of garlic or paprika.
- You can swap goat cheese with yogurt or cream cheese for a cheaper option.
